Ginger Snaps

Try some other Civil War staples like hardtack (a hard, flour-based biscuit) with other foods soldiers ate including beans, peas, rice, and dried vegetables. 

 In Chapter 12, Chris is given ginger snaps to eat. Try making these wonderful cookies with this easy recipe suitable for the classroom!

Simple Ginger Snaps Recipe

  • Ingredients:
    • 1 cup sugar
    • 3/4 cup butter, softened
    • 1/4 cup molasses
    • 1 egg
    • 2 1/4 cups all-purpose flour
    • 2 teaspoons baking soda
    • 1 teaspoon ground ginger
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 1/4 teaspoon salt
  • Instructions:
    1. Preheat oven to 350°F (175°C).
    2. In a large bowl, cream together sugar and butter until smooth.
    3. Mix in molasses and egg until well combined.
    4. Gradually add flour, baking soda, spices, and salt. Mix until dough forms.
    5. Roll dough into small balls, then roll in sugar.
    6. Place balls on a baking sheet, leaving space between them.
    7. Bake for 8-10 minutes or until golden brown. Let cool before serving.
